Samba Chicken Wings
Samba Chicken Wings prepared in a Cook & Hold Oven.
Ingredients
- Chicken Wings (approx. 500g)
- Samba Chili (50g)
- Paprika Powder (20g)
- Thyme (5g)
- Cooking Wine (30g)
- Honey (20g)
- Oil (20g)
- Salt (5g)
Preparation
1. Preheat the Cook & Hold to 125°C
2. Wash the chicken wings and score with a small knife
3. Mix the seasonings and rub all over the chicken wings
4. Let it marinate in a bowl for 1 to 2 hours then spread out in a GN pan
5. Place the pan of chicken wings into the Cook & Hold
6. Cook for 6 minutes then hold for 1 1/2 hours
7. Just before serving, crisp the skin on the wings by cooking for 4 minutes in the Combi oven at 200°C
