Creme Brulee
Creme Brulee prepared in a Cook & Hold
Ingredients
- Heavy Cream (200g)
- Milk (50g)
- 3 Egg Yolks
- 1 Vanilla Bean
- Sugar (100g)
Preparation
1. Preheat the Cook & Hold to 125°C
2. Mix the cream, milk, sugar, and egg yolks well in a medium bowl
3. Slice open the vanilla bean on the vertical and extract the grains of seeds with the blade of a knife and add to the bowl
4. Mix thoroughly and then pour contents into the bowl
5. Place the cream mixture in the oven and cook for 1 hour at 125°C
6. Remove from oven, let cool down completely, then place into fridge
7. Before serving, remove from the fridge, sprinkle with sugar on top then caramelize with a blow torch
